Finally!… Another Update

Hello!

Again, it seems to take us far too long to get more of these posts up here – I’m definitely gonna have to work on that!

Since last I wrote, we had received our save-the-dates and were in the process of securing everyone’s addresses to have them sent out. Shouldn’t take much longer before I am off to the post office with LOTS of mail. Who says junk mail is the only thing saving our postal service? Weddings seem to give them quite a bit, these days IMHO. 🙂

Moving on, the past couple of weeks have been interesting for Nichole and I. Poor Colie got sick a couple of weekends ago. Sinus infections can be the worst, especially when you’re apart from that special someone. When she came to visit that weekend I made a special brew of homemade chicken noodle soup that was amazing! I’ll post the recipe down below, but it definitely was just what the doctor ordered because she was back on her feet in no time. I’d like to think it was all my cooking, but her positive attitude and sheer awesomeness in the face of disease probably helped.

After that weekend, it was back to work as usual for the two of us. Colie spent most of last week and this immediate past weekend getting ready for her final review. She went to school Tuesday and absolutely NAILED IT! She will be getting an A in her class and it looks as though her time student teaching was a huge success, and I couldn’t be more proud of her. It’s obvious by the way folks talk up there that she’s made a wonderful impact on both her students and her peers at her school, and I know that this is truly what God called her to do.

Other than that, we spent the past weekend helping my brother prepare for his High School prom (he looked rather dashing) and went out to Peoria in Tulsa with my folks for a wonderful night of drinks and chatting – something we have to do more often. Oh, and sadly I had to miss Southwest District convention for the first time since joining Kappa Kappa Psi in 2004. For those who know me that’s saying something, but I did get to spend the weekend with my family, save some money – and win the Daniel George award! I got word from my sisters in TBΣ that the district awarded me the Daniel George award for bolstering joint relations for all of my work with sisters and brothers across the district even though I couldn’t attend convention myself. It put a great cap on a wonderful weekend, and helped ease the fact that I wasn’t at convention itself. I knew I still had folks thinking of me, which is always a great feeling.

Now that I have sufficiently fed my ego for the night (sorry about that, but it does happen from time to time), I’m going to head home and take care of some stuff. I had a sick kitty yesterday that I had to take care of, but Buttons is all better. Apparently a shot in the butt works on felines as well as humans. 🙂 For now, have a wonderful night everyone, and be looking for those save-the-dates to be in the mail soon!

P.S. Oh, and here’s that chicken noodle soup recipe – just in case you wanna try it. It’s real easy and fast, too!

Chicken Noodle Soup Recipe

Ingredients

  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped green onion
  • 1/2 cup sliced mushroom
  • 1/2 cup diced green/red/yellow pepper (adds just a little kick)
  • 4 (14.5 ounce) cans chicken broth
  • 1 (14.5 ounce) can vegetable broth
  • 1/2 pound chopped cooked chicken breast (or rotisserie chicken)
  • 1 1/2 cups egg noodles (I used the Amish egg noodles from Wal-Mart)
  • 1 cup sliced carrots
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste

Directions

In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.
